2014 Chardonnay - Ahead By A Century

The Tragically Hip White “Ahead By A Century”On October 4, 2014, the 100% Chardonnay grapes for this wine were hand harvested from the famed Wiens Farm in NOTL. After a 4 day cold soak of the grapes, they were de-stemmed and pressed into 500 litre French Oak Puncheons. Over a long cool fermentation with natural Indigenous yeasts, the wine was fermented dry but leaving tropical pineapple and lemon fruit flavours. The wine was then left on its lees for an additional 6 months building the mouthfeel and creaminess. A natural Malo-lactic fermentation was allowed to progress adding further layers of butter with a balanced acidity. Finally, after an additional 10 months of aging in oak, the wine developed more complex characteristics like toasted coconut, marshmallow and a hint of butterscotch. This wine represents some of the finest Chardonnay and is fitting homage to one of the finest pieces of music, both of which are Ahead by a Century. Enjoy!
